Welcome to my inaugural Make-a-Meal Monday post!
I have been working very hard and doing a lot of brainstorming to come up with some post ideas that will be helpful to other moms like myself. I love to cook and bake, and I am always excited to try new recipes out in order to get out of my meal planning rut. We definitely have our stand-bys that are always enjoyed, but we do get tired of always eating the same handful of meals every other week. Enter Make-a-Meal Mondays! I will be sharing a cooking or baking related post every Monday here on the blog, and it’s my hope that others will decide to join me! I have to be very up front with you, dear reader… I am not good at sticking to a budget or putting back money for an emergency fund or to pay expensive bills. So there are months where I really have to pinch pennies in order to get by. Please tell me you can relate?
One of the largest expenses in our large family household is food. We buy way too much convenience food and order in much too often. Not only are these options expensive, but they aren’t nearly as healthy as a home cooked meal. These two splurges are the first things to be cut when money is tight. Even so, the masses must be fed!
This past week, I went on a Pinterest binge looking for some new favorites to add to our meal rotation while trying to cut down on our grocery bill. We liked them SO MUCH, I wanted to share one recipe we tried – Korean Beef with Rice.
Korean Beef with Rice

This super simple ground beef recipe was a HUGE hit in our house! It’s easy to throw together in a hurry and most of the ingredients you likely already have on hand or can be purchased inexpensively. You can use traditional or instant rice according to your preference. We enjoyed adding petite whole green beans to the meat and sauce which gives them a savory sweet flavor. If you like a little spice, add more crushed red pepper to give it more zing.
Another variation on this recipe would be to swap the ground beef out for a different cut of beef – thin sliced round steak for example. If you decide to try this recipe and make changes – please leave me a comment and share with us what you changed and how it tasted!
Korean Beef with Rice

Ingredients
6 c prepared rice
1 tbsp sesame oil or peanut oil
2 lb ground beef
1/2 c soy sauce
1 c brown sugar
1/2 – 1 tsp crushed red pepper (
salt & pepper (to taste)
3 tsp of minced garlic (6 cloves)
1/2 tsp ground ginger
(optional add in) frozen string beans or broccoli
1 c chopped green onion
Directions
- Heat large skillet with oil and garlic over medium heat; add ground beef and brown; drain well.
- To ground beef add soy sauce, brown sugar, red pepper, ground ginger, and salt and pepper; stir and simmer about 10 minutes (once combined add frozen veggies if desired, cook until tender).
- Remove from heat; spoon over rice and top wiith green onions
- ENJOY!
